  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup brown sugar
  • 1 tablespoon vanilla bean paste
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and brown sugar until smooth.
  4. Add vanilla bean paste and eggs, one at a time, mixing after each addition.
  5. Stir in sour cream and salt until combined.
  6. Pour the filling over the crust and smooth the top.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool, then refrigerate for at least 4 hours before serving.
