1 cup graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
24 ounces cream cheese, softened
1 cup brown sugar
1 tablespoon vanilla bean paste
3 large eggs
1/2 cup sour cream
1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
In a large mixing bowl, beat cream cheese and brown sugar until smooth.
Add vanilla bean paste and eggs, one at a time, mixing after each addition.
Stir in sour cream and salt until combined.
Pour the filling over the crust and smooth the top.
Bake for 50-60 minutes or until the center is set.
Let it cool, then refrigerate for at least 4 hours before serving.
