These bakery-style blueberry muffins are light, fluffy, and packed with fresh blueberries.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, egg, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add lemon zest to the batter.
  • These muffins freeze well; just thaw before serving.
