½ teaspoon salt
½ cup butter
2 ½ cups packed brown sugar
3 eggs
1 ½ teaspoons vanilla extract
3 (1 ounce) squares unsweetened chocolate, melted
1 cup sour cream
1 cup boiling water
- For the Caramel Icing:
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 ¾ cups confectioners’ sugar
Directions
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Sift together the flour, baking soda, and salt in a medium bowl, then set aside.
- Mix the Wet Ingredients:
- In a large mixing bowl, beat ½ cup butter and 2 ½ cups brown sugar until well mixed. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and melted chocolate squares.
- Combine Dry and Wet Ingredients:
- Add half of the sour cream to the butter mixture, followed by half of the dry ingredients. Mix until well blended. Repeat with the remaining sour cream and dry ingredients. Finally, stir in the boiling water until the batter is smooth.
- Bake the Cake:
- Pour the batter into a greased 9×13 inch pan. Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before icing.
- Make the Caramel Icing:
- In a saucepan, melt ½ cup butter over medium heat. Stir in 1 cup brown sugar and bring it to a boil. Cook for about 2 minutes, stirring constantly. Add the milk and bring the mixture back to a boil. Remove the pan from the heat and place it in cold water. Stir in the confectioners’ sugar until smooth. Spread the icing over the still-warm cake.
